Sweet Potato Energy Bars

The great thing about these bars is that the sweet potato is already rather sweet and it needs very little additional sweetener. And they are also very tasty and nutritious.

Ingredients

  • 1 cup dates, pit removed
  • 1 cup coconut flour
  • 4 tablespoons ground flax seeds
  • 1 teaspoon cinnamon powder
  • 1 pinch nutmeg
  • 1 pinch salt
  • 5 eggs
  • 2 sweet potatoes, baked and mashed
  • 1/2 cup coconut oil
  • 1/2 cup coconut milk
  • 1/2 cup applesauce
  • 1 tablespoon orange zest

Method

Step 1

In a bowl, combine the coconut flour with the flax seeds, cinnamon, nutmeg, salt.

Step 2

Place the dates in a food processor and blend them then stir in the eggs, mashed potatoes, coconut oil, coconut milk, applesauce, orange zest.

Step 3

Stir in the dry ingredients and pulse until comes together like a dough.

Step 4

Transfer on a square pan lined with baking paper and bake in the preheated oven at 350F for 30-40 minutes.

Step 5

When done, let it cool in the pan then cut into small bars.

Step 6

Store in an airtight container until serving.
