Cashew and Coconut Butter

Paleo does not allow dairy products, but these are some great alternatives to butter or milk and some are even better and healthier, such as this cashew butter.

Ingredients

  • 5 Cups Shredded Dried Coconut
  • 2 Cups Raw Cashew Nuts
  • 1/4 Cup Solid Coconut Oil
  • 1 Pinch of Salt

Method

Step 1

Place the coconut into a powerful food processor and pulse until it starts to release the oils and turn into a paste. It will take around 10 minutes.

Step 2

Add the raw cashews and process unitl they are transformed into paste as well.

Step 3

Stir the coconut oil and add a pinch of salt.

Step 4

Spoon the butter into jars and seal them with lids.

Step 5

Store in the fridge for as long as it takes to be consumed.
