Avocado Deviled Eggs

Deviled eggs are a classic dish, but keep in mind that you can still enjoy them even when you are on a diet. All you have to do is replace the mayonnaise with avocado which is just as creamy and filling.

  • 8 hard boiled eggs
  • 2 ripe avocados
  • 1 teaspoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/2 teaspoon smoked paprika


Step 1

First of all, peel the avocado and put the pulp in a bowl or blender with lemon juice, salt and pepper and puree it until smooth.

Step 2

Cut the eggs in half lengthwise and scoop out the yolks. Be careful to leave the egg whites complete.

Step 3

Stir the yolks into in the avocado puree.

Step 4

Season with salt and pepper then transfer the mixture into a piping bag and fill the egg whites.

Step 5

Decorate with a leaf of parsley and a sprinkle of smoked paprika.
